- 2 cups fresh peaches, peeled and diced
- 1 cup granulated sugar
- 1/4 cup diced jalapeños (seeds removed for less heat)
- 1/4 cup apple cider vinegar
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 package (1.75 oz) fruit pectin (such as Sure-Jell)
- In a large saucepan, combine the diced peaches, jalapeños, sugar, apple cider vinegar, lemon juice, cinnamon, and salt. Stir well to combine.
- Heat the mixture over medium heat, stirring frequently until the sugar dissolves and the mixture begins to bubble.
- Once bubbling, bring the mixture to a rolling boil and stir in the fruit pectin. Boil for 1-2 minutes, stirring constantly until the jam thickens.
- Remove from heat and let the jam cool for about 5 minutes. Skim off any foam that forms on the surface.
- Pour the jam into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars with lids and allow them to cool completely at room temperature.
- Once cooled, refrigerate the jam for at least 24 hours before using to allow the flavors to meld.
Notes
- For a spicier jam, leave some seeds in the jalapeños or add more jalapeños to taste.
- Substitute half of the peaches with another fruit, such as mango or pineapple, for a unique flavor twist.
