- 2 cups fresh peaches, peeled and diced
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a medium bowl, combine the diced peaches with lemon juice and cinnamon. Set aside.
- In a large bowl, mix together the flour, oats, brown sugar, granulated sugar, baking powder, and salt.
- Pour in the melted butter and vanilla extract, then stir until the mixture is crumbly and well combined.
- Press half of the oat mixture into the bottom of the prepared baking pan to form a crust.
- Spread the peach mixture evenly over the crust.
- Crumble the remaining oat mixture over the peaches to create a topping.
- Bake for 30-35 minutes, or until the top is golden brown and the peaches are bubbly.
- Allow the bars to cool in the pan for at least 15 minutes before cutting into squares.
Notes
- For a touch of extra flavor, add 1/4 teaspoon of nutmeg to the peach mixture.
