Peach Cobbler Bars are the perfect summer treat, combining fresh peaches with a crumbly oat topping.

Ingredients

  • 2 cups fresh peaches, peeled and diced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a medium bowl, combine the diced peaches with lemon juice and cinnamon. Set aside.
  3. In a large bowl, mix together the flour, oats, brown sugar, granulated sugar, baking powder, and salt.
  4. Pour in the melted butter and vanilla extract, then stir until the mixture is crumbly and well combined.
  5. Press half of the oat mixture into the bottom of the prepared baking pan to form a crust.
  6. Spread the peach mixture evenly over the crust.
  7. Crumble the remaining oat mixture over the peaches to create a topping.
  8. Bake for 30-35 minutes, or until the top is golden brown and the peaches are bubbly.
  9. Allow the bars to cool in the pan for at least 15 minutes before cutting into squares.

Notes

  • For a touch of extra flavor, add 1/4 teaspoon of nutmeg to the peach mixture.
  • Try substituting the peaches with other fruits like blueberries or raspberries for a different twist.
