1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups milk (dairy or non-dairy)
1/4 cup maple syrup or honey
1 large egg
1 teaspoon vanilla extract
2 cups fresh or frozen peaches, diced
1/2 cup chopped walnuts or pecans (optional)
1/4 cup raisins or dried cranberries (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon. Mix well to ensure even distribution of the dry ingredients.
In another bowl, whisk together the milk, maple syrup (or honey), egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches and nuts or dried fruit if using.
Transfer the mixture to the prepared baking dish, spreading it evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
