- 2 cups pancake mix
- 1 1/2 cups milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 pound breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Butter or cooking spray for greasing the baking dish
- Preheat the oven to 350°F. Grease a 9×13-inch baking dish with butter or cooking spray.
- In a large mixing bowl, combine the pancake mix, milk, eggs, vanilla extract, baking powder, cinnamon, and salt. Whisk until smooth.
- Spread the cooked and crumbled sausage evenly in the bottom of the prepared baking dish.
- Pour the pancake batter over the sausage, ensuring it covers evenly.
- Sprinkle the shredded cheddar cheese on top of the batter.
- Drizzle the maple syrup over the cheese.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is golden brown and a toothpick inserted in the center comes out clean.
- Let it cool for 5 minutes before slicing and serving.
Notes
- For a sweeter version, add chocolate chips or blueberries to the batter before baking.
- To make it a bit healthier, substitute turkey sausage for the regular sausage and use whole wheat pancake mix.
