A delicious and hearty breakfast casserole combining pancakes and sausage, perfect for feeding a crowd.

  • 1 1/2 cups milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for greasing the baking dish

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, combine the pancake mix, milk, eggs, vanilla extract, baking powder, cinnamon, and salt. Whisk until smooth.
  3. Spread the cooked and crumbled sausage evenly in the bottom of the prepared baking dish.
  4. Pour the pancake batter over the sausage, ensuring it covers evenly.
  5. Sprinkle the shredded cheddar cheese on top of the batter.
  6. Drizzle the maple syrup over the cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is golden brown and a toothpick inserted in the center comes out clean.
  8. Let it cool for 5 minutes before slicing and serving.

  • For a sweeter version, add chocolate chips or blueberries to the batter before baking.
