2 to 3 pounds pork loin roast
1 cup fresh cranberries
1 cup orange juice
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, mix together the orange juice, Dijon mustard, honey, olive oil, garlic powder, onion powder, salt, pepper, thyme, and rosemary until well combined.
Place the pork loin roast in a roasting pan. Pour the orange juice mixture over the roast, ensuring it is well coated. Scatter the fresh cranberries around the roast in the pan.
Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C). Baste the roast with the pan juices every 20 minutes for added flavor.
Once cooked, remove the roast from the oven and let it rest for 10 minutes before slicing. Serve with the cranberries and pan juices drizzled over the top.
Notes
For a sweeter glaze, add an additional tablespoon of honey.
You can also substitute the fresh cranberries with dried cranberries for a different texture and flavor.
Serve with roasted vegetables or mashed potatoes for a complete meal.
