Delicious and easy No-Bake Coconut Pecan Praline Cookies that are perfect for satisfying your sweet tooth without turning on the oven.

  • 2 cups shredded unsweetened coconut
  • 1 cup chopped pecans
  • 1 cup rolled oats
  • 1 cup brown sugar, packed
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the shredded coconut, chopped pecans, and rolled oats. Set aside.
  2. In a medium saucepan, combine the brown sugar, cocoa powder, unsalted butter, milk, and salt. Cook over medium heat, stirring constantly until the mixture comes to a gentle boil. Allow it to boil for 1 minute without stirring.
  3. Remove the saucepan from heat and stir in the vanilla extract.
  4. Pour the hot mixture over the coconut, pecans, and oats in the mixing bowl. Stir until everything is well combined and evenly coated.
  5. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet. Flatten them slightly with the back of the spoon.
  6. Refrigerate the cookies for at least 30 minutes to set.

Notes

  • For a chocolate twist, add 1/2 cup of mini chocolate chips to the mixture before dropping onto the baking sheet.
  • Substitute walnuts or almonds for pecans for a different nutty flavor.
