A festive and delicious no-bake dessert that combines layers of gingerbread cookies, cream cheese, chocolate pudding, and peppermint candies, perfect for the holiday season.

Ingredients

  • 2 cups crushed gingerbread cookies
  • 1 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 1 cup cream cheese, softened
  • 2 cups whipped topping (like Cool Whip)
  • 1 teaspoon vanilla extract
  • 1 cup chocolate pudding mix
  • 2 cups milk
  • 1 cup crushed peppermint candies
  • 1/2 cup mini chocolate chips

Instructions

  1. In a medium bowl, combine the crushed gingerbread cookies and melted butter. Mix until the cookies are evenly coated. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust.
  2. In another bowl, beat together the powdered sugar, cream cheese, whipped topping, and vanilla extract until smooth and creamy. Spread this mixture evenly over the cookie crust.
  3. In a separate bowl, whisk together the chocolate pudding mix and milk until thickened, about 2 minutes. Pour the pudding over the cream cheese layer and spread it out evenly.
  4. Sprinkle the crushed peppermint candies and mini chocolate chips on top of the pudding layer.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the layers to set.
  6. Before serving, you can add additional whipped topping and a sprinkle of crushed peppermint candies for decoration.

  • For a different flavor, try using vanilla wafers instead of gingerbread cookies for the crust.
  • Add a layer of sliced strawberries or raspberries between the cream cheese layer and the pudding for a fruity twist.
