A delicious and hearty meatloaf stuffed with gooey mozzarella cheese and wrapped in crispy bacon.

Ingredients

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup milk
  • 8 ounces mozzarella cheese, cut into small cubes
  • 6 slices bacon, cooked and chopped
  • ½ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and milk. Mix until well combined.
  3. Gently fold in the chopped bacon and mozzarella cheese until evenly distributed.
  4. On a baking sheet lined with parchment paper, form the meat mixture into a loaf shape, making a well in the center.
  5. Fill the well with additional mozzarella cheese if desired, then carefully fold the meat over to seal it.
  6. Spread the ketchup and Worcestershire sauce evenly over the top of the meatloaf.
  7. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley if using.

Notes

  • For a spicier kick, add 1 teaspoon of crushed red pepper flakes to the meat mixture.
  • Substitute ground turkey or chicken for a lighter version, adjusting the cooking time as needed.
