2 large boneless, skinless chicken breasts (about 1.5 pounds total)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
2 tablespoons olive oil
1 tablespoon unsalted butter
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, garlic powder, onion powder, and smoked paprika.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown.
Add the butter to the skillet and let it melt, then drizzle the lemon juice over the chicken.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Remove the skillet from the oven and let the chicken rest for 5 minutes before slicing.
Garnish with chopped fresh parsley before serving.
Notes
For added flavor, marinate the chicken in the seasoning mix and lemon juice for at least 30 minutes before cooking.
You can substitute the chicken breasts with boneless, skinless chicken thighs for a juicier result.
