Morton’s Chicken Christopher is a creamy and flavorful dish featuring seared chicken breasts topped with a rich sauce made from mushrooms, bell peppers, onions, and Parmesan cheese.
Season the chicken breasts with salt and black pepper on both sides.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms, red bell pepper, and onion. Sauté for about 5-7 minutes until the vegetables are tender.
Reduce the heat to medium-low and pour in the heavy cream. Stir in the grated Parmesan cheese until melted and well combined.
Return the chicken to the skillet, spooning some of the sauce over the top.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
Notes
For added flavor, marinate the chicken in lemon juice and garlic for 30 minutes before cooking.
You can substitute the heavy cream with half-and-half for a lighter version, or use a dairy-free cream alternative if desired.
