Moo Goo Gai Pan is a delicious and healthy stir-fry dish featuring chicken and a variety of vegetables, perfect for a quick dinner.

Ingredients

  • 2 cups boneless, skinless chicken breast, sliced thinly
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1 cup snow peas
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked white rice or noodles for serving

Instructions

  1. In a bowl, combine the sliced chicken with soy sauce, oyster sauce, and cornstarch. Mix well and let marinate for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the mushrooms, broccoli, bell peppers, and snow peas to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet. Pour in the chicken broth and sesame oil, stirring to combine. Cook for an additional 2-3 minutes until everything is heated through. Season with salt and pepper to taste.
  6. Serve the Moo Goo Gai Pan over cooked white rice or noodles.

Notes

  • For a vegetarian version, substitute the chicken with tofu or tempeh.
  • Add your favorite vegetables like carrots or baby corn for extra flavor and nutrition.
