Mississippi Chicken is a simple and flavorful dish made with chicken thighs, ranch dressing mix, and pepperoncini peppers, perfect for a comforting meal.

  • 2 pounds boneless, skinless chicken thighs
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup pepperoncini peppers (with juice)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken thighs in a 9×13 inch baking dish.
  3. In a small bowl, mix together the ranch dressing mix, au jus gravy mix, garlic powder, and black pepper. Sprinkle this mixture evenly over the chicken.
  4. Pour the pepperoncini peppers and their juice over the chicken.
  5. Cut the butter into slices and place them evenly over the top of the chicken and seasoning mixture.
  6. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  7. After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the edges are slightly crispy.
  8. Remove from the oven and let it rest for 5 minutes before serving.

Notes

  • For a spicier kick, add sliced jalapeños along with the pepperoncini.
  • Serve the chicken over rice or mashed potatoes to soak up the delicious sauce.
