Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup crushed peppermint candies (optional)
  • Additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract and peppermint extract, mixing until well combined.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Fold in the mini chocolate chips and crushed peppermint candies if using.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, dust the cookies with additional powdered sugar before serving.

Notes

  • For a richer flavor, try adding 1/4 cup of cocoa powder to the dough for a chocolate version.
  • To make these cookies festive, substitute the crushed peppermint candies with colored sprinkles or holiday-themed decorations.
