2 pounds boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup salsa
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
Add the seasoned chicken to the skillet and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and place it in a baking dish.
Pour the salsa evenly over the chicken breasts.
In a separate bowl, mix the cheddar cheese, Monterey Jack cheese, and sour cream until well combined. Spread the cheese mixture over the salsa-covered chicken.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
Notes
For a spicier dish, add diced jalapeños to the salsa or use a spicy salsa.
Serve with warm tortillas or over rice for a complete meal.
