A delicious and hearty Mexican Breakfast Casserole that combines eggs, chorizo, and a variety of vegetables, perfect for starting your day.

  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup diced bell peppers (red, green, or a mix)
  • 1 cup diced onion
  • 1 cup cooked and crumbled chorizo sausage
  • 2 cups shredded cheddar cheese
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 avocado, sliced (for serving)
  • Sour cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, cumin, and chili powder until well combined.
  3. In the prepared baking dish, layer the cooked chorizo, black beans, corn, bell peppers, and onion evenly across the bottom.
  4. Pour the egg mixture over the layered ingredients in the baking dish.
  5. Sprinkle the shredded cheddar cheese evenly on top of the egg mixture.
  6. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
  7. Remove from the oven and let it cool for 5-10 minutes before slicing.
  8. Garnish with fresh cilantro and serve with avocado slices and sour cream on the side.

Notes

  • For a vegetarian option, omit the chorizo and add more vegetables like zucchini or mushrooms.
