2 pounds boneless, skinless chicken breasts
1 cup buttermilk
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/2 cup unsalted butter, melted
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish with cooking spray or a little melted butter.
In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken breasts and ensure they are fully coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
In another bowl, mix together the flour and grated Parmesan cheese.
Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring they are well coated.
Place the coated chicken breasts in the prepared baking dish. Drizzle the melted butter evenly over the top of the chicken.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
For a spicier kick, add 1/2 teaspoon of cayenne pepper to the flour mixture.
You can substitute the buttermilk with plain yogurt mixed with a little water for a similar effect.
