2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 large egg
1/2 cup almond flour
1/4 cup chopped sun-dried tomatoes (optional)
1/4 cup sliced black olives (optional)
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the chopped spinach, feta cheese, mozzarella cheese, Parmesan cheese, garlic powder, oregano, black pepper, and red pepper flakes if using. Mix well.
In a separate bowl, beat the egg and then add it to the cheese and spinach mixture. Stir until fully combined.
Gradually add the almond flour to the mixture, stirring until a thick batter forms. If desired, fold in the sun-dried tomatoes and black olives for extra flavor.
Using a tablespoon, scoop out portions of the mixture and place them on the prepared baking sheet, spacing them about 2 inches apart.
Flatten each scoop slightly with the back of the spoon to form a crisp shape.
Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the tops are set.
Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
For a gluten-free option, ensure your almond flour is certified gluten-free.
Add fresh herbs like parsley or dill for an extra burst of flavor.
