1 pound ground chicken
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup red bell pepper, diced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
4 whole wheat pitas
1/2 cup tzatziki sauce
Instructions
Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
Stir in the minced garlic and cook for an additional minute.
Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes.
Stir in the oregano, cumin, paprika, salt, and pepper. Mix well and cook for another 2 minutes to combine the flavors.
While the chicken is cooking, prepare the salad by combining the cherry tomatoes, cucumber, red bell pepper, feta cheese, and parsley in a bowl. Toss gently to mix.
To assemble the pitas, warm the whole wheat pitas in a dry skillet or microwave for a few seconds until pliable.
Fill each pita with the cooked ground chicken and top with the salad mixture. Drizzle tzatziki sauce over the top.
Serve immediately while warm.
Notes
For added flavor, try adding sliced olives or avocado to the salad mixture.
If you prefer a spicier kick, incorporate some diced jalapeños or a sprinkle of red pepper flakes into the ground chicken mixture.
