2 slices of sourdough bread
2 tablespoons olive oil
1/4 cup ricotta cheese
1/4 cup fresh spinach, chopped
2 tablespoons sun-dried tomatoes, chopped
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup mozzarella cheese, shredded
Instructions
Heat a skillet over medium heat and add 1 tablespoon of olive oil.
In a small bowl, mix together the ricotta cheese, chopped spinach, sun-dried tomatoes, garlic powder, salt, and black pepper until well combined.
Spread the ricotta mixture evenly on one side of each slice of sourdough bread.
Sprinkle the shredded mozzarella cheese on top of the ricotta mixture on one slice, then place the other slice on top, ricotta side down.
Add the remaining tablespoon of olive oil to the skillet. Carefully place the sandwich in the skillet and cook for about 3-4 minutes, or until the bread is golden brown.
Flip the sandwich and cook for an additional 3-4 minutes, until the other side is golden brown and the cheese is melted.
Remove from the skillet, slice in half, and serve warm.
Notes
For a twist, try adding sliced olives or feta cheese to the filling for extra flavor.
You can also use whole wheat bread for a healthier option.
For a spicy kick, add a few slices of jalapeño or a sprinkle of red pepper flakes to the ricotta mixture.
