A flavorful Mediterranean dish featuring baked salmon topped with feta cheese, olives, and cherry tomatoes.

Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking dish with parchment paper or lightly grease it with cooking spray.
  3. Place the salmon fillets in the prepared baking dish, skin-side down.
  4. Drizzle the olive oil over the salmon and sprinkle with oregano, garlic powder, salt, and black pepper.
  5. Scatter the cherry tomatoes and Kalamata olives around the salmon fillets.
  6. Top each salmon fillet with crumbled feta cheese and arrange lemon slices on top.
  7. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
  8. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add red pepper flakes to the seasoning mix.
  • Serve with a side of quinoa or a mixed green salad for a complete meal.
