A simple and delicious Mediterranean Baked Fish recipe featuring white fish fillets, fresh vegetables, and aromatic spices.

  • 2 (6-ounce) white fish fillets (such as cod or tilapia)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1 lemon, thinly sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, oregano, garlic powder, paprika, salt, and pepper.
  3. Place the fish fillets in a baking dish and brush both sides with the olive oil mixture.
  4. Scatter the cherry tomatoes, Kalamata olives, and red onion around the fish in the baking dish.
  5. Lay the lemon slices on top of the fish and vegetables.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is opaque.
  7. Remove from the oven and garnish with fresh parsley before serving.

Notes

  • For added flavor, marinate the fish in the olive oil mixture for 30 minutes before baking.
  • You can substitute the white fish with salmon or trout for a richer taste.
