- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
- Preheat the oven to 400°F (200°C).
- In a large baking dish, arrange the fish fillets in the center.
- In a bowl, combine the cherry tomatoes, Kalamata olives, red onion, garlic, olive oil, oregano, thyme, salt, and black pepper. Mix well.
- Spoon the vegetable mixture over the fish fillets, ensuring they are evenly covered.
- Place lemon slices on top of the fish and vegetables.
- Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and is cooked through.
