  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, arrange the fish fillets in the center.
  3. In a bowl, combine the cherry tomatoes, Kalamata olives, red onion, garlic, olive oil, oregano, thyme, salt, and black pepper. Mix well.
  4. Spoon the vegetable mixture over the fish fillets, ensuring they are evenly covered.
  5. Place lemon slices on top of the fish and vegetables.
  6. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and is cooked through.
