1 ½ pounds ground beef
1 cup breadcrumbs
1 small onion, finely chopped
1 cup milk
2 large eggs
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
½ cup ketchup (plus extra for topping)
1 cup shredded cheddar cheese
4 large potatoes, peeled and cubed
½ cup butter
½ cup milk (for mashed potatoes)
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, chopped onion, milk, eggs, Worcestershire sauce, garlic powder, salt, black pepper, and ½ cup ketchup. Mix until well combined.
Transfer the meat mixture into a loaf pan and shape it into a loaf. Spread additional ketchup on top for a glaze.
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
While the meatloaf is baking, prepare the mashed potatoes. In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
Add butter and ½ cup milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
Once the meatloaf is done, remove it from the oven and let it rest for 10 minutes before slicing.
Serve slices of meatloaf with a generous scoop of mashed potatoes on the side, topped with shredded cheddar cheese if desired.
Notes
For added flavor, mix in chopped bell peppers or mushrooms into the meatloaf mixture.
Substitute ground turkey or chicken for a leaner option, and use sweet potatoes instead of regular potatoes for a different taste.
