A delicious and easy recipe for Meatball Parmesan Sub, perfect for a hearty meal.

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 jar (24 ounces) marinara sauce
  • 4 sub rolls
  • 8 ounces sliced mozzarella cheese
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned.
  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat. Once the meatballs are done, add them to the sauce and let them simmer for 5 minutes.
  6. Slice the sub rolls in half lengthwise and place them on a baking sheet.
  7. Spoon the meatballs and sauce onto each sub roll, then top with mozzarella cheese.
  8. Drizzle a little olive oil over the cheese and place the baking sheet in the oven. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For added flavor, try mixing in some Italian seasoning or crushed red pepper flakes into the meatball mixture.
  • You can also substitute ground turkey or chicken for a leaner option.
