1 pound ground beef
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
1 large egg
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 jar (24 ounces) marinara sauce
4 cups mashed potatoes (prepared from scratch or store-bought)
1 cup shredded mozzarella cheese
1 teaspoon Italian seasoning
Instructions
Preheat the oven to 375°F.
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined.
Form the mixture into 1-inch meatballs and place them on a baking sheet. Bake in the preheated oven for 20 minutes, or until cooked through.
In a large baking dish, spread half of the marinara sauce on the bottom. Arrange the baked meatballs on top of the sauce.
Spread the mashed potatoes evenly over the meatballs, then pour the remaining marinara sauce on top. Sprinkle the mozzarella cheese and Italian seasoning over the potatoes.
Bake in the oven for an additional 25-30 minutes, or until the cheese is melted and bubbly.
Let the dish cool for 5 minutes before serving.
Notes
For a creamier mashed potato topping, mix in 1/4 cup of sour cream or cream cheese before spreading it over the meatballs.
For a lighter version, substitute ground turkey for the beef and use cauliflower mash instead of traditional mashed potatoes.
