2 cups mashed potatoes (prepared and cooled)
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup all-purpose flour
1 large egg
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 cup chopped green onions (optional)
1 cup breadcrumbs (for coating)
Vegetable oil (for frying)
Instructions
In a large mixing bowl, combine the cooled mashed potatoes, cheddar cheese, Parmesan cheese, flour, egg, garlic powder, onion powder, black pepper, salt, and green onions (if using). Mix until well combined.
Using your hands, form the potato mixture into small balls, about 1 inch in diameter.
Roll each ball in breadcrumbs until fully coated. Place the coated balls on a baking sheet.
In a large skillet, heat about 1 inch of vegetable oil over medium heat until hot (around 350°F).
Carefully add the potato balls to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
Serve warm with your favorite dipping sauce.
Notes
For a spicy kick, add a teaspoon of cayenne pepper or chopped jalapeños to the potato mixture.
Try using different types of cheese, such as mozzarella or pepper jack, for varied flavors.
