2 pounds boneless, skinless chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 teaspoon Italian seasoning
1/2 cup grated Parmesan cheese
1 cup fresh spinach
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Season the chicken thighs with salt and pepper on both sides.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear for about 5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Add the Italian seasoning and bring the mixture to a simmer.
Stir in the grated Parmesan cheese until melted and smooth.
Return the chicken to the skillet, nestling it into the creamy sauce. Top with fresh spinach.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F).
Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
Notes
For a lighter version, substitute half of the heavy cream with Greek yogurt.
For added flavor, toss in sun-dried tomatoes or mushrooms before baking.
