- 2 (6-ounce) salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped (for garnish)
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a small bowl, mix together the olive oil, garlic powder, paprika, salt, and pepper.
- Rub the spice mixture evenly over both sides of the salmon fillets.
- In another bowl, whisk together the Dijon mustard, honey, and lemon juice until well combined.
- Place the salmon fillets on the prepared baking sheet and brush the mustard mixture generously over the top of each fillet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
- Remove from the oven and let rest for 2 minutes. Garnish with fresh parsley before serving.

- For a spicy kick, add a pinch of cayenne pepper to the spice mixture.
