A delicious and easy-to-make marinated cheese and salami appetizer, perfect for gatherings.

Ingredients

  • 8 ounces of block cheese (such as cheddar or mozzarella), cut into cubes
  • 4 ounces of salami, sliced into strips
  • 1 cup of assorted pickles (such as dill pickles and pepperoncini), cut into bite-sized pieces
  • 1/2 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of dried oregano
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine the cheese cubes, salami strips, and assorted pickles.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, crushed red pepper flakes (if using), salt, and pepper until well combined.
  3. Pour the marinade over the cheese, salami, and pickles. Gently toss to ensure everything is evenly coated.
  4. Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  5. Before serving, give the mixture a gentle stir and garnish with chopped fresh parsley. Serve with toothpicks or on a platter with crackers.
