A quick and flavorful treat featuring marinated cheese and olives, perfect for gatherings.

Ingredients

  • 8 oz cheese, cubed (cheddar, mozzarella, Monterey Jack, provolone, or feta work well)
  • 1 cup mixed olives, drained (green, black, Kalamata, or stuffed olives)
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • ¼ tsp red pepper flakes (optional)
  • 1 small garlic clove, minced
  • Salt and black pepper, to taste
  • 1 tbsp fresh parsley or basil, chopped (optional)

Instructions

  1. Place cubed cheese and olives in a medium bowl or jar.
  2. In a small bowl, whisk together olive oil, vinegar, Italian seasoning, oregano, red pepper flakes, garlic, salt, and pepper.
  3. Pour marinade over the cheese and olives. Toss gently to coat.
  4. Cover and refrigerate for at least 2 hours (overnight is best for flavor).
  5. Let sit at room temperature for 15 minutes before serving.
