- 8 oz cheese, cubed (cheddar, mozzarella, Monterey Jack, provolone, or feta work well)
- 1 cup mixed olives, drained (green, black, Kalamata, or stuffed olives)
- ¼ cup olive oil
- 2 tbsp red wine vinegar or lemon juice
- 1 tsp Italian seasoning
- ½ tsp dried oregano
- ¼ tsp red pepper flakes (optional)
- 1 small garlic clove, minced
- Salt and black pepper, to taste
- 1 tbsp fresh parsley or basil, chopped (optional)
- Place cubed cheese and olives in a medium bowl or jar.
- In a small bowl, whisk together olive oil, vinegar, Italian seasoning, oregano, red pepper flakes, garlic, salt, and pepper.
- Pour marinade over the cheese and olives. Toss gently to coat.
- Cover and refrigerate for at least 2 hours (overnight is best for flavor).
- Let sit at room temperature for 15 minutes before serving.
