2 pork tenderloins (about 1 pound each)
1/4 cup pure maple syrup
1/4 cup Dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 tablespoon apple cider vinegar
Instructions
Preheat your oven to 400°F.
In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, salt, black pepper, thyme, rosemary, and apple cider vinegar until well combined.
Place the pork tenderloins in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Remove the pork from the marinade and place it in a baking dish. Reserve the marinade for later use.
Roast the pork in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F. Baste the pork with the reserved marinade halfway through cooking.
Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing. This helps retain the juices.
Slice the pork tenderloin and serve with your favorite sides. Drizzle any remaining sauce over the top for added flavor.
Notes
For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
