  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sugar-free ketchup
  • 1/4 cup dill pickles, chopped
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the skillet.
  3. Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt, black pepper, smoked paprika, and oregano. Cook until the beef is browned and cooked through, about 5-7 minutes. Drain any excess fat.
  5. In a large mixing bowl, combine the heavy cream, shredded cheddar cheese, sugar-free ketchup, chopped pickles, and eggs. Mix until well combined.
  6. Add the cooked beef mixture and bacon to the bowl, stirring until everything is evenly coated.
  7. Transfer the mixture to a greased 9×13 inch baking dish, spreading it out evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is slightly golden.
  9. Let it cool for 5 minutes before serving. Garnish with fresh parsley if desired.
