1 pound ground beef
6 slices bacon, chopped
1 small onion, diced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup sugar-free ketchup
1/4 cup dill pickles, chopped
2 large eggs
1/4 cup fresh parsley, chopped (optional for garnish)
Instructions
Preheat the oven to 350°F.
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the skillet.
Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt, black pepper, smoked paprika, and oregano. Cook until the beef is browned and cooked through, about 5-7 minutes. Drain any excess fat.
In a large mixing bowl, combine the heavy cream, shredded cheddar cheese, sugar-free ketchup, chopped pickles, and eggs. Mix until well combined.
Add the cooked beef mixture and bacon to the bowl, stirring until everything is evenly coated.
Transfer the mixture to a greased 9×13 inch baking dish, spreading it out evenly.
Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is slightly golden.
Let it cool for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
You can substitute ground turkey or chicken for the beef for a lighter option.
