A delicious and hearty Chicken Parmesan recipe inspired by LongHorn Steakhouse, featuring breaded chicken breasts topped with marinara sauce and melted cheese.
Begin by preparing the chicken breasts. Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
Set up a breading station: In one shallow dish, place the flour. In a second dish, beat the eggs. In a third dish, combine the breadcrumbs, garlic powder, onion powder, oregano, salt, and pepper.
Dredge each chicken breast in the flour, shaking off the excess. Dip it into the beaten eggs, allowing any excess to drip off, and then coat it in the breadcrumb mixture, pressing gently to adhere.
In a large skillet, heat about 1/4 inch of olive oil over medium heat. Once hot, carefully add the breaded chicken breasts to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
Once cooked, transfer the chicken breasts to a baking dish. Spoon marinara sauce over each piece, then sprinkle with mozzarella and Parmesan cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly. If desired, broil for an additional 2-3 minutes for a golden top.
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before serving.
Notes
For a healthier version, bake the breaded chicken instead of frying.
Add sautéed spinach or mushrooms to the marinara sauce for extra flavor and nutrition.
