A hearty and delicious Loaded Potato and Meatloaf Casserole that combines savory meatloaf with creamy mashed potatoes, topped with cheese and bacon.

Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup
  • 1/4 cup barbecue sauce
  • 4 large russet potatoes, peeled and diced
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Press the meat mixture evenly into the bottom of a 9×13 inch baking dish.
  4. In a large pot, boil the diced potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
  5. Add the milk, sour cream, and half of the cheddar cheese to the potatoes. Mash until smooth and creamy.
  6. Spread the mashed potatoes over the meatloaf layer in the baking dish.
  7. Drizzle the ketchup and barbecue sauce over the mashed potatoes.
  8. Sprinkle the remaining cheddar cheese, crumbled bacon, and chopped green onions on top.
  9. Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
  10. Let the casserole cool for 5-10 minutes before serving.

Notes

  • For a spicier kick, add diced jalapeños to the meat mixture.
  • You can also substitute ground turkey or chicken for a lighter version.
