  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg, lime zest, lime juice, and vanilla extract to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be slightly sticky.
  6. Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
  7. Once chilled, scoop tablespoon-sized balls of dough and roll them in powdered sugar until fully coated. Place them on the prepared baking sheet about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the tops are crinkled. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. For the glaze, whisk together the powdered sugar, lime juice, and lime zest in a small bowl until smooth. Drizzle over the cooled cookies.
