2 medium zucchinis, spiralized into noodles
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 cloves garlic, minced
1 lemon, juiced and zested
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Parmesan cheese, grated (optional, for serving)
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt, pepper, and dried oregano. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
Add the spiralized zucchini noodles to the skillet and cook for 2-3 minutes, stirring gently, until just tender.
Return the cooked chicken to the skillet, along with the lemon juice and zest. Toss everything together and cook for an additional 1-2 minutes to heat through.
Serve immediately, garnished with fresh parsley and grated Parmesan cheese if desired.
Notes
For a spicy kick, add red pepper flakes when cooking the chicken.
Substitute the chicken with shrimp or tofu for a different protein option.
