A delicious twist on the classic Reuben sandwich, this Layered Reuben Casserole Bake combines corned beef, sauerkraut, Swiss cheese, and rye bread into a hearty dish perfect for gatherings.

  • 1 pound corned beef, chopped
  • 1 cup sauerkraut, drained and rinsed
  • 1 cup Swiss cheese, shredded
  • 1 cup Russian or Thousand Island dressing
  • 8 slices rye bread, cut into cubes
  • 1/2 cup butter, melted
  • 1 teaspoon caraway seeds (optional)
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, and dressing. Mix well to combine.
  3. In a separate bowl, toss the rye bread cubes with melted butter, caraway seeds, and black pepper until evenly coated.
  4. In a greased 9×13-inch baking dish, layer half of the buttered rye bread cubes on the bottom.
  5. Spread half of the corned beef mixture over the bread layer.
  6. Add the remaining rye bread cubes on top of the corned beef mixture.
  7. Spread the remaining corned beef mixture over the second layer of bread.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.
  10. Let it cool for 5-10 minutes before serving.

  • For a vegetarian option, substitute corned beef with tempeh or mushrooms and use a plant-based cheese.
