2 pounds chicken wings or drumsticks
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon baking powder
1 cup buttermilk
1/2 cup gochujang (Korean chili paste)
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 cup shredded mozzarella cheese
1/2 cup milk
1 tablespoon butter
1/4 teaspoon cayenne pepper (optional)
Chopped green onions and sesame seeds for garnish
Instructions
In a large bowl, combine flour, garlic powder, onion powder, paprika, salt, black pepper, and baking powder. Mix well.
In another bowl, pour the buttermilk. Dip each piece of chicken into the buttermilk, allowing excess to drip off, then coat in the flour mixture. Place the coated chicken on a baking sheet.
Heat oil in a deep fryer or a large pot to 350°F. Fry the chicken in batches until golden brown and cooked through, about 8-10 minutes per batch. Remove and drain on paper towels.
In a small saucepan, combine gochujang, honey, soy sauce, rice vinegar, and sesame oil. Heat over medium heat, stirring until well combined and slightly thickened, about 3-5 minutes.
In another saucepan, melt butter over medium heat. Add milk and bring to a simmer. Gradually stir in mozzarella cheese until melted and smooth. If desired, add cayenne pepper for extra heat.
Toss the fried chicken in the gochujang sauce until well coated.
Serve the spicy chicken drizzled with cheese sauce and garnish with chopped green onions and sesame seeds.
Notes
For extra crunch, double fry the chicken by frying it once, letting it rest for a few minutes, and then frying it again until crispy.
For a milder version, reduce the amount of gochujang and add more honey for sweetness.
You can also substitute the mozzarella with cheddar cheese for a different flavor profile.
