1 pound ground beef (80/20 blend)
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
1 teaspoon garlic powder
1 teaspoon ginger powder
Salt and pepper to taste
4 hamburger buns
1 cup kimchi, chopped
1 cup coleslaw mix (cabbage and carrots)
2 tablespoons mayonnaise
1 tablespoon rice vinegar
1 teaspoon sriracha (optional)
1 tablespoon green onions, chopped (for garnish)
Instructions
In a large bowl, combine the ground beef, soy sauce, brown sugar, sesame oil, garlic powder, ginger powder, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
Divide the mixture into four equal portions and shape them into patties. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.
Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired level of doneness.
While the burgers are cooking, prepare the kimchi slaw. In a bowl, combine the chopped kimchi, coleslaw mix, mayonnaise, rice vinegar, and sriracha (if using). Toss until well mixed.
Toast the hamburger buns on the grill or in a toaster until golden brown.
Assemble the burgers by placing a patty on each bun, topping with a generous scoop of kimchi slaw, and garnishing with chopped green onions. Serve immediately.
Notes
For a spicier kick, add sliced jalapeños to the kimchi slaw.
Substitute ground turkey or chicken for a leaner option while still enjoying the Korean flavors.
