A delicious twist on the traditional Reuben sandwich, this Keto Reuben Casserole is a hearty and satisfying dish perfect for those following a low-carb diet.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart as it cooks. Drain any excess fat.
  3. In a large mixing bowl, combine the cooked ground beef, sauerkraut, Swiss cheese, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
  4. Transfer the mixture into a greased 9×13-inch baking dish, spreading it evenly. If desired, sprinkle chopped green onions on top for added flavor.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Let it cool for 5 minutes before serving.

Notes

  • For a spicier kick, add a teaspoon of hot sauce to the mixture before baking.
  • Substitute ground beef with ground turkey or chicken for a lighter option.
