  • 2 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup cooked bacon, crumbled
  • 1/4 cup green onions, sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Rub the spice mixture evenly over both sides of the chicken breasts.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  5. Remove the skillet from heat and layer the chopped spinach and cherry tomatoes over the chicken.
  6. Sprinkle the shredded Monterey Jack cheese and crumbled bacon on top.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Remove from the oven and garnish with sliced green onions before serving.

  • For added flavor, marinate the chicken in the spice mixture for 30 minutes before cooking.
