2 large chicken breasts, boneless and skinless
4 ounces ham, thinly sliced
4 ounces Swiss cheese, sliced
1 cup almond flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
2 large eggs
2 tablespoons heavy cream
¼ cup olive oil or avocado oil for frying
Instructions
Preheat the oven to 375°F.
Place the chicken breasts between two sheets of plastic wrap and pound them to about ½ inch thickness using a meat mallet or rolling pin.
Lay 2 slices of ham and 2 slices of Swiss cheese on each chicken breast. Roll the chicken tightly, starting from one end, and secure with toothpicks or kitchen twine.
In a shallow bowl, combine the almond flour, garlic powder, onion powder, paprika, salt, and black pepper.
In another bowl, whisk together the eggs and heavy cream until well combined.
Dip each chicken roll in the egg mixture, allowing excess to drip off, then coat thoroughly in the almond flour mixture.
Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken rolls and cook for about 3-4 minutes on each side until golden brown.
Transfer the chicken rolls to a baking dish and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F.
Remove from the oven, let rest for 5 minutes, then remove toothpicks or twine before slicing.
Notes
For a crispy topping, sprinkle some additional almond flour mixed with Parmesan cheese on top before baking.
You can substitute the ham and cheese with turkey and cheddar for a different flavor profile.
