A delicious and easy Keto Beef Stroganoff recipe featuring tender beef and creamy sauce served over cabbage noodles.

  • 1 pound beef sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 small head of green cabbage, sliced into thin strips
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
  3. Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine and bring to a simmer.
  4. Reduce the heat to low and stir in the sour cream and paprika. Return the cooked beef to the skillet and mix well. Allow to simmer for an additional 5 minutes, stirring occasionally.
  5. Meanwhile, in a separate pot, bring water to a boil. Add the sliced cabbage and cook for 3-4 minutes until tender. Drain and set aside.
  6. To serve, place a portion of cabbage noodles on a plate and top with the beef stroganoff. Garnish with chopped parsley.

Notes

  • For added flavor, consider marinating the beef in Worcestershire sauce and garlic for 30 minutes before cooking.
  • You can substitute the cabbage noodles with zucchini noodles for a different texture and flavor.
