1 pound beef sirloin, thinly sliced
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
8 ounces mushrooms, sliced
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 cup sour cream
1 teaspoon paprika
Salt and pepper to taste
1 small head of green cabbage, sliced into thin strips
Fresh parsley, chopped (for garnish)
Instructions
In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine and bring to a simmer.
Reduce the heat to low and stir in the sour cream and paprika. Return the cooked beef to the skillet and mix well. Allow to simmer for an additional 5 minutes, stirring occasionally.
Meanwhile, in a separate pot, bring water to a boil. Add the sliced cabbage and cook for 3-4 minutes until tender. Drain and set aside.
To serve, place a portion of cabbage noodles on a plate and top with the beef stroganoff. Garnish with chopped parsley.
Notes
For added flavor, consider marinating the beef in Worcestershire sauce and garlic for 30 minutes before cooking.
You can substitute the cabbage noodles with zucchini noodles for a different texture and flavor.
