2 pounds bone-in, skin-on chicken thighs
1 packet (1 ounce) ranch seasoning mix
1 cup shredded cheddar cheese
1 cup cream cheese, softened
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the cream cheese, ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
Add the chicken thighs to the bowl and coat them thoroughly with the cream cheese mixture.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs skin-side down and sear for about 5 minutes until the skin is crispy and golden brown.
Flip the chicken thighs over and sprinkle the shredded cheddar cheese on top.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
Notes
For extra flavor, add a tablespoon of Dijon mustard to the cream cheese mixture.
You can substitute the cheddar cheese with mozzarella or pepper jack for a different taste.
