2 large bone-in pork chops (about 1 inch thick)
1 cup fresh spinach, chopped
1/2 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon fresh lemon juice
Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, breadcrumbs, minced garlic, oregano, salt, and pepper. Mix until well combined.
Using a sharp knife, create a pocket in each pork chop by slicing horizontally, being careful not to cut all the way through.
Stuff each pork chop generously with the cheese and spinach mixture. Secure the opening with toothpicks if needed.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed pork chops and sear for about 3-4 minutes on each side until golden brown.
Drizzle the lemon juice over the pork chops, then transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
Remove from the oven and let the pork chops rest for 5 minutes before serving.
Notes
For added flavor, try mixing in some chopped sun-dried tomatoes or cooked bacon into the stuffing.
If you prefer a healthier option, substitute the cream cheese with Greek yogurt and use whole wheat breadcrumbs.
