  • ¼ cup brown sugar
  • 8 oz (225 g) cream cheese, softened

  • 1 (8 oz) tub whipped topping (like Cool Whip)
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 cup corn syrup (light or dark)
  • ½ cup butter
  • 4 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 ½ cups chopped pecans
  • 1 (8 oz) tub whipped topping
  • ¼ cup chopped pecans, for garnish
  • Optional: caramel sauce for drizzling

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and brown sugar in a bowl.
  3. Press into the bottom of a 9×13-inch baking dish.
  4. Bake for 10 minutes, then let it cool completely.
  5. In a mixing bowl, beat cream cheese until smooth.
  6. Add powdered sugar and vanilla extract; mix well.
  7. Fold in whipped topping until fully combined.
  8. Spread over the cooled crust. Chill in the refrigerator.
  9. In a saucepan, combine brown sugar, granulated sugar, corn syrup, and butter.
  10. Cook over medium heat until the butter melts and the mixture starts to simmer.
  11. Slowly add the beaten eggs while whisking constantly (to avoid scrambling).
  12. Stir in vanilla extract and chopped pecans.
  13. Cook for about 5–7 minutes, until thickened. Let cool slightly.
  14. Spread evenly over the cream cheese layer. Chill for at least 3–4 hours, or overnight for best results.
  15. Spread the remaining whipped topping over the pecan layer.
  16. Garnish with chopped pecans and drizzle with caramel sauce if desired.
  17. Chill until ready to serve. Slice and enjoy this rich, creamy, nutty delight!
