Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or butter.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, milk, egg, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, toss the diced peaches with lemon juice, cinnamon, and brown sugar until evenly coated.
  6. Gently fold the peach mixture into the batter until just incorporated.
  7. Using a spoon, fill each muffin cup about halfway with the batter.
  8. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Allow the cruffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, dust with powdered sugar before serving.
