2 pounds pork tenderloin
1/4 cup Dijon mustard
1/4 cup pure maple syrup
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 tablespoon apple cider vinegar
Instructions
Preheat your oven to 400°F.
In a small bowl, whisk together the Dijon mustard, maple syrup, olive oil, minced garlic, salt, black pepper, thyme, rosemary, and apple cider vinegar until well combined.
Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
Remove the pork from the marinade and place it in a baking dish. Reserve the marinade for later use.
Bake the pork in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F. Baste the pork with the reserved marinade halfway through cooking for added flavor.
Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing. Serve with your favorite sides.
Notes
For added sweetness, consider adding a tablespoon of brown sugar to the marinade.
If you prefer a spicier kick, add a teaspoon of red pepper flakes to the marinade.
