  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 400°F.
  2. In a small bowl, whisk together the Dijon mustard, maple syrup, olive oil, minced garlic, salt, black pepper, thyme, rosemary, and apple cider vinegar until well combined.
  3. Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
  4. Remove the pork from the marinade and place it in a baking dish. Reserve the marinade for later use.
  5. Bake the pork in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F. Baste the pork with the reserved marinade halfway through cooking for added flavor.
  6. Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing. Serve with your favorite sides.
