1 pound cod fillets
4 tablespoons unsalted butter
4 cloves garlic, minced
1 lemon, juiced and zested
1 teaspoon dried parsley
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
Lemon wedges, for serving
Instructions
Preheat your oven to 400°F (200°C).
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
Stir in the lemon juice, lemon zest, dried parsley, salt, and black pepper. Remove from heat and set aside.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the cod fillets and sear for about 2-3 minutes on each side until golden brown.
Pour the lemon garlic butter mixture over the seared cod fillets.
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cod flakes easily with a fork.
Serve hot with lemon wedges on the side.
Notes
For added flavor, sprinkle some red pepper flakes over the cod before baking for a spicy kick.
Substitute cod with another white fish like tilapia or haddock for a different taste.
