  • 2 sheets of frozen puff pastry, thawed
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  3. Roll out each sheet of puff pastry on a lightly floured surface to smooth out creases. Cut each sheet into 4 squares.
  4. Place a tablespoon of the cream cheese mixture in the center of each pastry square. Top with a few blueberries.
  5. Fold the corners of the pastry squares over the filling to create a pocket. Pinch the edges to seal tightly.
  6. Brush the tops of the pastries with the beaten egg and sprinkle with granulated sugar.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
  8. Allow to cool slightly before serving. Enjoy warm or at room temperature.
